Recipe - Turkey Meat Balls

Easy Mid Week Meal - great to batch cook too!

Turkey is a healthy source of protein and combined with the other ingredients these meatballs provide good levels of zinc, B vitamins and selenium.
Serve with homemade tomato sauce, green leafy vegetables and red lentil pasta.

Ingredients

500g turkey mince

2 big handfuls of chopped raw spinach

50g parmesan cheese

2 tsp. Dried mixed herbs (or fresh)

Oat flour, ground flax seed or breadcrumbs

1 egg

Optional Extras

2 tbsp. black olives

2 tbsp. Crumbled feta

2 tbsp. sundried tomato paste

Method

Put all of the ingredients in a big bowl and mix together thoroughly – using your hands is best!

Roll the mixture into golf ball size meatballs and bake on a lightly oiled baking tray in a medium oven for 30 minutes.

Warm the tomato sauce in a large pan and add the cooked meatballs.

Serve with lentil pasta and green leafy vegetables.
