Recipe - Spicy Baked Chicken

Serves 4

The recipe uses chicken but it works well with fish or tofu. This meal is easy to make and uses lots of vegetables for a big nutrition tick! 

Serve with steamed leafy greens - it also tastes fantastic with coconut rice and black beans.

Ingredients

4 large chicken thighs (no skin)

3 – 4 Bell Peppers (whatever colour you have to hand!)

2 Leeks

1 tbsp. Jerk Spice

2 tbsp. Paprika

3 tbsp. Olive oil 

Salt and pepper to taste

Method

Preheat oven to 170C

Wash and slice the peppers and leeks and arrange in a large baking tray or oven proof dish. Drizzle with olive oil and bake for 10 mins

Mix together the jerk spice, paprika and olive oil in a bowl, add the chicken thighs and thoroughly coat the meat.

Place the chicken on top of the leeks and peppers and bake for 20 mins. Turn the chicken over and bake for another 15 mins until the chicken is cooked. 

Serve with green leafy vegetables, black beans and coconut rice.
