Recipe - Oat Pancakes

Oat flour is easy to make - just put rolled oats into a blender and whizz for a few seconds - you can make a batch and keep in a sealed jar.

The recipe makes a thick pancake which is very filling.

I often triple the recipe and store the cooked pancakes in the freezer, they can be reheated in the toaster.

A few topping ideas :

blueberries and almonds, apple, walnuts and cinnamon, almond butter and bananas or go savoury with feta cheese, tomatoes and spinach.

SERVES 1 for breakfast or 2 as a snack!

Ingredients

  • 2 eggs

  • 40g oat flour

  • 100g Greek Yoghurt (or any natural yoghurt)

Method

1. Add the eggs, oat flour and Greek yoghurt to a bowl and whisk until light & fluffy.

2. Heat a pan on a medium heat, with your oil, and pour in small amounts of the mixture.

3. Cook each pancake for 2-3 minutes before flipping with a spatula and cooking the other side - repeat until you have none of the mixture left.

4. Serve with a sprinkle of cinnamon or lemon or grated apple or berries or dried fruit
