Recipe - Black Bean Burger

A serving of black beans contains fibre, protein, zinc, magnesium and folate. I ate my first batch with a salad but adding halloumi and a squeeze of lime was epic, I also tried them with a poached egg on top – also pretty scrumptious!

Makes 4 Burgers

Ingredients

1 tin black beans (about 350g) – drained

4 spring onions – chopped

Handful of fresh herbs – chopped

1 green chilli – diced

Juice and zest from half a lime (use the other half to squeeze over the burgers when cooked)

1 tsp. cumin

1 egg

2 heaped tbsp. ground flaxseed

Method

1. Put the black beans into a large bowl and mash with a potato masher, or a fork, leave some of the beans whole. 

2.  Add all of the other ingredients and mix together. 

3. Use your hands and form into patties (burger shapes!)

4. Place on an oiled baking tray and cook at 1600C for about 20 mins
