Sumac Tray Bake

Everyone has their favourite tray bake recipe and this one is mine (at the moment!) The flavours work really well together, you can add extra chilli powder if you want a bit more heat. It will also tastes good with halloumi cheese or tofu if you are a vegetarian.


SERVES 4

 

Ingredients

  • 2 Red Onions chopped
  • 1 Red Pepper chopped
  • 1 Red Chilli
  • 3 Cloves Garlic
  • 1 Aubergine chopped
  • 1 tin of Chickpeas
  • 1 tbsp. Tomato Paste
  • 1 tbsp. Sumac
  • 1 tspn. Paprika
  • 1 tspn Chilli Powder
  • 3 tbspn. Olive Oil
  • 4 - 6 Chicken thighs

 

 

Method

1. Mix the sumac, tomato paste, paprika, chilli powder and 1 - 2 tbsp. of olive oil together in a bowl.

2. Add the chicken to the spices and mix until covered. Leave in the fridge to marinade for an hour or so (if you have time)

3. Put all of the vegetables and chickpeas in a large oven tray and drizzle with olive oil.

4. Place the chicken on top of the vegetables and bake in a preheated oven at 160 for 30 - 45 minutes until the chicken is cooked and the vegetables are soft.

5. Serve with green leafy vegetables.
