Ginger Biscuits

These are soft chewy biscuits that contain ginger and turmeric, both of which have anti-inflammatory properties. The tahini paste provides magnesium, calcium and healthy fats and ground almonds contain fibre and vitamin E. Plus these cookies taste really good!


MAKES 16 BISCUITS

 

Ingredients

  • 150g ground almonds
  • 2 tsp ground ginger
  • 2 tsp ground turmeric
  • 4cm square grated fresh ginger
  • 1/4 tsp baking powder
  • 75g chopped dark chocolate (85% cocoa)
  • 30g tahini
  • 40g melted butter or coconut oil
  • 1 tblsp honey


 

Method

1. Pre-heat the oven to 190oC and line a baking sheet with baking parchment

2. Mix all of the ingredients together in a large bowl

3. Form the dough into walnut size balls and press down lightly to form little cookies.

4. Bake for 12-15 mins until lightly golden.

5. Leave to cool on the baking sheet for 5 mins and then transfer to a wire rack to cool completely before serving
