Spicy Bean Chilli

Beans provide a good source of complex carbohydrate and fibre which can help to balance blood glucose levels. They also provide protein, magnesium, folic acid vitamin B6 and a range of antioxidants so are a fantastic addition to any meal! This recipe suggests using mixed beans and kidney beans but it doesn’t really matter what beans you use! Black beans taste great, or cannellini beans or butter beans – the choice is yours!  


SERVES 4-6

 

Ingredients

  • 2 Onions
  • 1 small Leek
  • 1 Red Pepper
  • 2 Red Chillies
  • 3 Cloves crushed Garlic
  • 2 tbsp. olive oil
  • 1 tin of Chopped Tomatoes
  • 2 tsp. Paprika
  • 1 tsp. Chilli Powder
  • 2 tsp. Turmeric
  • 1 tsp. Black pepper
  • Large handful spinach
  • 500 ml vegetable stock
  • 1 tin mixed beans
  • 1 tin kidney beans

 

Method

1. Sautee the onions in the oilve oil unil soft and then add the garlic and leeks and stir for a few minutes.

2. Add the peppers, chillies, beans and all of the spices and stir.

3. Pour in the tomatoes and vegetable stock stir and simmer for 30minutes.

4. Add the spinach and heat until it has wilted. Serve with green leafy vegetables, and a spoonful of yoghurt and some chopped avocado if you like!
