Sesame Salmon

Salmon is an excellent source of protein, selenium and B12 and of couse it contains a polyunsaturated essential fatty acid called omega 3 that has numerous health benefits. This recipe adds in sesame seeds that provide good levels of calcium and B vitamins. Sesame also contains a phytonutrient called sesamin which is a powerful antioxidant and some studies suggest that it can help to moderate blood lipid levels. The sesame salmon tastes great hot but is also good cold in a packed lunch.

SERVES 2

 

Ingredients

2 tbsp. olive oil

2 salmon fillets

4 heaped tbsp. sesame seeds


Method

1. Slice the salmon into thick wedges.

2. Place the sesame seeds into a bowl and firmly press each salmon wedge into the sesame seeds until all sides are covered.

3. Heat the oil in a large frying pan over a medium heat and carefully add the salmon pieces.

4. Fry gently until the salmon is cooked though, this should only take about 5 minutes.

5. Serve with a green salad.
