Salmon and Eggs

This is one of my favourite lunches, it has about 30g of protein so keeps me full up all afternoon. The chopped spinach works well and provides fibre, magnesium, folic acid and vitamin A


SERVES 1

 

Ingredients

  • 2 eggs
  • 2 slices of smoked salmon, chopped
  • 2 large handfuls of spinach, chopped
  • Black pepper

Method

1. Put all of the ingredients in a big bowl and mix together thoroughly.

2. Pour into a pan over a medium heat and stir until the eggs set and the salmon changes colour.

3. Serve with chopped tomatoes, avocado and a rice cake
