Roasted Butternut Squash

Butternut squash is a wonderful source of vitamin A and contains antioxidant carotinoids that have numerous health benefits.


One medium squash is usually enough for 2 -3 people

 

Ingredients

  • 1 medium butternut squash

  • olive oil

To serve

  • Feta cheese

  • Watercress

  • Sunflower seeds


Method

1. Wash the squash and chop in half

2. Scrape out the seeds and discard

3. Place the squash on a baking tray with a drizzle of olive oil and cook for 30 - 40 minutes.

4. Serve with green salad, feta cheese and a sprinkle of sunflower seeds.
