Leek and Celeriac Soup

Celeriac is an ugly looking vegetable but it tastes fantastic

and contains good levels of fibre, B vitamins and vitamin K.


SERVES 4

 

Ingredients

1 tblspn. olive oil

1 large leek, washed and chopped

1 celeriac, peeled and chopped

200g white beans (butter beans work well)

1L chicken or vegetable stock

1 tsp. mixed herbs

Method

1. Heat the oil over a medium heat and gently sauté the leeks until they are soft

2. Add the rest of the ingredients and simmer for 30 minutes until the celeriac is soft

3. Tasts great with blue cheese!
