Apple Crumble

 Apples contain good levels of a soluble fibre called pectin that can help to normalize intestinal contractions and can therefore help with both diarrhoea and constipation. The fibre also provides a food source for our ‘friendly’ gut bacteria, which are essential for our health.

The stewed apples taste great on their own but this crumble is a delicious way to eat them and provides extra nutrients from the nuts and oats in the topping.

Serves 6 - 8

Ingredients

  • 500 - 600g apples
  • 70g melted butter
  • 35g brown sugar
  • 70g ground almonds
  • 70g oats
  • 40g chopped walnuts
  • 1 tbsp. ground flaxseed
  • 2 tsp cinnamon

 

Method

1. Peel and chop the apples and place in a pan with a cup of water and a splash of lemon juice (or orange juice). If you have organic apples you can leave the skin on.

2. Simmer the apples over a low heat for 20 - 25 minutes until they are soft. Stir the pan occasionally to make sure that the don't stick.

3. Mix all of the dry ingredients in a large bowl and then pour in the melted butter.

4. Stir thoroughly until completely mixed.

5. When the apples are cooked tansfer to an oven proof dish and cover with the crumble topping.

6. Bake for 30 minutes and serve with a dollop of greek yoghurt or a splash of cream.
