Black Bean Brownies

A typical supermarket chocolate brownie has at least 5 times as much sugar compared to these
black bean brownies, this recipe is a treat but will provide protein and fibre to slow down the release of sugar.
Plus - I promise you won’t taste the beans!


MAKES 16 BROWNIES

 

Ingredients

  • 1 tin black beans (drained and rinsed well)
  • 50g cacao powder or coco powder (check there is no sugar added)
  • 50g oat flour (rolled oats whizzed up in a food processor)
  • 30g milled flax seed
  • 50g ground almonds
  • 50g coconut butter
  • 3 eggs
  • 50g dark chocolate chopped into small pieces (70- 90% coco content)
  • 50g honey or brown sugar
  • ½ tea spoon baking powder

 

Method

1. Heat the oven to 160oC and line a baking tin with grease proof paper.

2. Whizz up the black beans in the food processor until very smooth then add the eggs, honey and coconut butter and whizz again.

3. Add the dry ingredients and mix thoroughly.

4. Tip the mixture into the baking tin and smooth down. Bake for 20-25 mins - don’t over bake or they will be too dry.

5. Remove from the oven and cut into squares (makes about 16 brownies)

PS - I promise that you can’t taste the beans!!
